This is a recipe that I have been wanting to make for a long time now, and I finally got around to it. It is a cream cheese bread recipe that I like to make my mom and kids eat because it is so yummy. I liked it so much that I decided to share it with you.

Experiment with a Mini Loaf
This bread is the outcome of a one-night experiment between Matt and me. We’ve already made a fantastic keto bread with almond flour, but could it be done with peanut flour as well? Well, spoiler alert: yeah, it is possible.
We wanted to give peanut flour the respect it deserved because it was new in our kitchen. That meant preparing five separate tiny loaves to observe how different components worked together. One contained peanut butter, two contained coco powder, three had cream cheese, four contained psyllium husk, and five contained only peanut flour. The winner, if the title doesn’t make it apparent, was number three, the cream cheese loaf, therefore we had to turn it into a larger 8-inch loaf!

Cream cheese is the key ingredient in our Bread with Cream Cheese. It not only keeps the bread moist, but also gives it a rich texture similar to a pound cake. It’s just sweet enough with a hint of sourness. You can have it for breakfast or as a dessert by slicing it up with butter. In the last week, I’ve made it three times and taken it to friends’ houses. The non-keto eating test was passed!
Trust us when we say that once you try this bread, you won’t be able to stop eating it. In addition, we’d like to call attention to peanut flour. It’s similar to coconut flour in that it absorbs a lot of liquid, so you only need a little bit. However, we would choose it over coconut flour when preparing loaves. You consume less calories by using less to make a full loaf — isn’t that worth investing in?!

Instructions:

Using a hand mixer, thoroughly blend room temperature or melted butter and cream cheese.

Combine the golden monk fruit, yolks, vanilla, baking powder, and salt in a mixing bowl. Mix everything up thoroughly.

Finally, stir in the peanut flour until a thick batter is formed.

Bake for 25 minutes at 350 degrees in a greased loaf pan.
