Bites of Heavenly Keto Cheesecake

Keto Cheesecake Bites

Cream cheese, nuts, and ground cinnamon are used to make this three-layer cheesecake.

  • Preheat the oven to 350 degrees Fahrenheit. Set aside an 8×8 baking pan that has been butter or parchment paper lined.

  • Combine almond flour, erythritol, stevia, cinnamon, and baking soda in a large mixing bowl. Mix in the melted butter until the mixture is crumbly. Fill the prepared pan halfway with the crust mixture and press it into a level layer.

  • Bake for 8-10 minutes, then remove from oven and allow to cool fully.


  • Using an electric mixer, beat the cream cheese, erythritol, and stevia until smooth and creamy in a clean bowl. Add the vanilla and eggs one at a time, blending thoroughly after each addition.

  • Set aside the cheesecake mixture, which should be poured in an equal layer over the chilled crust.

Topping: Pecans

  • Combine heavy cream, butter, stevia, and salt in a medium saucepan over medium heat. Allow to come to a low boil, stirring frequently, for 1 minute.

  • Remove the pan from the heat and mix in the vanilla and pecans. Allow it cool for a few minutes before spooning over the cheesecake layer.

  • Preheat the oven to 350°F and bake the cheesecake bars for 40 minutes, or until the pecans are golden brown. Allow to cool completely before covering and chilling for at least 2 hours or overnight. Serve by cutting into bars.


**If you like your desserts extra sweet, feel free to increase the amount of erythritol in the cheesecake layer! Because these cheesecake bites are incredibly calorically dense, we cut them into 16 pieces, despite the fact that the photos show nine. You are welcome to cut them to your desired size, but this will change the macros! Serving Size: 1 Bite Net Carbs: 3g
