The star of this show, in my opinion, were these cheddar cheese fluffy cookies! WOW! Plus, they are so quick and easy to make and you only need one bowl for them. Mix the ingredients and place on a baking sheet lined with baking paper, or use a silicone mat like I do. It’s so simple!
While the cookies are baking, make the sauce!
The key to thickening sauces is to add cream cheese and xanthan gum, a common method for thickening sauces and ketone-friendly recipes.
Keto Biscuits and Sausages in Meat Juice

A thick, savory homemade biscuit with sauce that is keto friendly!
For cookies :
- 1 1/2 cups flour am am am am 1 1 1
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 3 tablespoons of butter, cut into small cubes
- 2 large eggs
- 1 cup grated cheddar cheese
For the sauce:
- 1 pound ground breakfast sausage
- 1/2 teaspoon dried sage
- 3 ounces cream cheese
- 3/4 cup whipped cream
- 1/2 cup water
- 1/2 teaspoon xanthan gum
- Salt and pepper to taste
Preheat the oven to 350 degrees. Line a baking sheet with parchment paper or use a silicone mat like I did.
Prepare the cookies as follows: In a medium bowl, mix the almond flour, baking powder, salt and pepper. Beat in the butter with a pastry knife or crush the butter until the mixture resembles sand. Stir in the eggs and add the cheese. Mix until a sticky dough forms.
Using an ice cream scoop, place 8 cookies on a baking sheet. Bake for 15 to 20 minutes until the meat is cooked through and lightly browned. Set aside to cool.
While the biscuits are cooking, add the sausage to the pan and cook until cooked through. Season with sage.
Melt the cream cheese and stir in the cream, water, xanthan gum, salt and pepper. Bring the sauce to a boil, then turn the heat down low to thicken the sauce. Serve the sausage and gravy on the biscuits.
