Lemon Keto Bars

A sweet cookie crust is covered with a layer of acidic lemon.

Instructions:

Base for a Lemon Bar

  • Combine the almond flour, erythritol, baking powder, and salt in a large mixing bowl. Mix until everything is well blended.

  • Combine the vanilla, stevia, egg, and butter in a mixing bowl. Use a hand mixer or a food processor to combine the ingredients. In two batches, add the flour mixture to the butter mixture.

  • Refrigerate the dough for at least 1 hour before using.

  • Preheat the oven to 375°F and line or spray an 8-inch baking pan with parchment paper or non-stick spray.

  • Transfer the refrigerated dough to the baking pan and use your hand or a spatula to push it down.

  • Bake for 6-8 minutes, until the base is slightly undercooked. While the foundation cools, prepare the filling.

Filling for Lemon Bars

  • Reduce the temperature of the oven to 350 degrees Fahrenheit.

  • Combine the eggs, egg yolk, lemon juice, lemon zest, erythritol, stevia, and vanilla essence in a large mixing dish. Mix until everything is well blended. Then add the gelatin, coconut flour, and almond flour. Allow 5 minutes for the mixture to thicken.

  • Fill the baked crust with the filling and bake for another 12-15 minutes.

  • Allow the bars to cool after removing them from the oven. Transfer to the refrigerator for 1 hour to set after room temperature has been reached.

  • Before slicing and serving, dust with powdered erythritol if preferred. Best served chilled and kept in the fridge for up to one week in an airtight container.
