Because mushrooms have always been Matt’s favorite veggie, I prepared this Oven Roasted Mushroom dish for him. From the first mouthful to the last, he was enthralled! I didn’t want it to be too complex since I believe that side dishes should always be simple to prepare yet tasty enough to seem as if they took a long time to prepare, and this recipe is precisely that! You could certainly make it with whatever vegetable you have on hand, but mushrooms soak up the butter and cheese like a dream.

That’s why we came up with this recipe! Mushrooms have never been my favorite, but anything topped with butter, pork rinds, and Parmesan cheese has my vote. It’s also really simple and foolproof to prepare, so you can serve it to the whole family any night of the week or even for a last-minute party or occasion. Everyone’s best buddy is a simple side dish recipe.

Oven Roasted Mushrooms with Low Carb
Oven roasting vegetables is always our preferred way to cook them when making them in bulk because the clean up is easier and the oven does all the work! While that isn’t the case here for these delicious mushrooms, the added work of sauteing them and then topping them with parmesan, garlic and pork rinds makes these oven roasted mushrooms that much more worth it!

Oven Roasted Mushrooms with Parmesan and Garlic

Instructions:

Preheat the oven to 400 degrees Fahrenheit and heat a large oven-safe pan over medium-high heat. Wash the mushrooms and, if the stems are excessively long, cut them off.

Add the cleaned and trimmed mushrooms to the heated pan with the olive oil.

Remove them from the fire after 2-3 minutes of cooking. Make sure they’re all facing the same direction, with the stem pointing up.

Combine the topping ingredients in a small bowl using your hands or a spatula.

Apply a generous amount of the topping on each mushroom, making sure it adheres to the stem and bottom. Once all of the ground pork rinds and Parmesan have been completely covered in the topping, sprinkle with more ground pork rinds and Parmesan if desired.

I’ve been experimenting with roasting things in my oven lately. I’m not sure why, but I just start with a few things on low heat and just start poking around. Last night I tried roasting some mushrooms in the oven. They were delicious! The flavor of the parmesan cheese and garlic really came through, and the mushrooms were super tender..
