Tips for making the best sourdough rolls

You’ll need fresh sourdough for this recipe for homemade sourdough muffins. What is fresh sourdough? It is an active, bubbling starter that feeds regularly and rises predictably. The handwork in this recipe is pretty minimal, but you do need to do some prep work. Here’s the cooktop I prefer to use:

  • Day 1 Evening – Kneading dough
  • Day 2 tomorrow – Roll Formation
  • Afternoon – Baking the buns

Ambient temperature will determine how quickly the yeast phases will occur, but this baking schedule is a good basic model to follow. The only change I often make is to bake the scones earlier on hot days and later on cooler days. Forming sourdough buns is pretty easy once you get the hang of it. First, divide the dough into 16 equal parts and gently roll each part into a ball. Pull the edges together and set aside to make an even top. Place the buns, teflon side down, on the baking sheet. How to make sourdough rolls

Ingredients: Instructions:

  1. Mix all ingredients in the bowl of a blender or by hand in a large bowl.
  2. If using a mixer, turn on the dough hook and knead for 10 minutes. If you make it by hand, knead it in a bowl.
  3. Cover and let rise until double in size, about 8-12 hours or overnight.
  4. Gently press the dough flat and divide into 16 equal pieces.
  5. Form each piece of dough into a ball, folding the edges inward and folding over to form an even top.
  6. Place each bun face down in an oiled 9 x 13 cm baking dish.
  7. Let the buns rise, covered, until they fill the baking dish, about 6-8 hours.
  8. Preheat oven to 375ºF.
  9. Bake the buns in 25 minutes until golden brown.
  10. Brush the tops of the warm rolls with butter or a pastry brush. Serve hot.

How to store sourdough bread rolls

Because sourdough does not mold as easily as unleavened breads, these breads can be stored at room temperature for several days or longer. If reheating frozen rolls, let them thaw at room temperature on the counter first. Then place the buns in the preheated oven (350ºF) for about 5 minutes.
