  • Turkey breast- with bone, with skin, gives the most flavor and keeps the white meat from drying out. Let the turkey breast stand at room temperature for about 30 minutes before roasting.
  • Oil– use salted or unsalted, I used unsalted as a base for the garlic and herb oil to season the meat.
  • Garlic cloves
  • Herbs– Fresh herbs are the most delicious, but in this case I only had dried leaves and the meat was also incredibly delicious. Use a mixture of your favorites: sage leaves, rosemary, thyme, parsley.
  • Wort: salt, black pepper and paprika (optional)

It will keep for about 24 hours in the refrigerator. I preheat the oven to 450°F to crisp up the skin and start the browning process, then I lower the heat to 350°F to get the breast cooked through and through. It cooks faster than a whole turkey.   • 5-6 pounds skinless boneless turkey breast

Garlic herb oil

  • 5 tbsp butter butterscotch
  • Chop 4 cloves of garlic finely
  • 1 tablespoon of fresh green beans, finely chopped
  • 1 tablespoon of delicately chopped rosemary leaves
  • 1 tablespoon of delicately chopped thyme leaves
  • 1 tablespoon finely chopped parsley
  • 1 1/4 teaspoons salt
  • 1/2 teaspoon black pepper
  • Remove the turkey from the refrigerator and roast it in the garlic-herb butter.
  • Preheat the oven to 230°C. Grease the oven dish with baking spray.
  • In a medium bowl, mix the softened butter, chopped garlic, sage, rosemary, chopped thyme and parsley, salt and pepper.
  • Loosen the skin of the turkey breast with a teaspoon or your fingers. Use 2/3 of the oil under the skin and spread the rest over the top of the turkey breast. Use your hands to make sure it is evenly distributed.
  • Place the turkey in a baking dish lined with parchment paper (for easy cleaning). Bake for 15 minutes or until skin is crispy.
  • Reduce the oven temperature to 350°F/180°C and cover the turkey with foil. Roast for 1 hour and 15 minutes, basting with pan juices every 30 minutes.
  • The turkey is cooked when a meat thermometer inserted into the thickest part of the meat reads 165°F /74°C.
  • Let the turkey rest, covered with foil, for about 15 to 20 minutes.
  • Sprinkle with rosemary and serve with melted butter and pan juices.
