This keto Italian stuffed peppers recipe we’ve found is crazy delicious. The peppers are filled with a blend of mozzarella cheese, Italian sausage, and bacon, then topped with a simple tomato sauce. This recipe is perfect for dinner, lunch, or your next party!

If you like traditional stuffed peppers with white rice and all the Italian flavors, it’s actually pretty easy to recreate this recipe in a similar low-carb version. I use cauliflower rice for our keto stuffed peppers!

These keto stuffed peppers turned out delicious and I love how easy it is to make the Italian sausage stuffing and then bake them until the cheese melts and bubbles. YUMMY!

The result is a baked bell pepper stuffed with a meaty tomato filling and melted cheese – the perfect comfort food. This is one of my favorite keto meals….. And it’s sure to please even those who don’t do keto!

Tips for making the best stuffed peppers

    • Everyone prepares stuffed peppers a little differently. I prefer to put foil on the baking sheet and opt for a longer cooking time in the oven rather than cooking the peppers in a separate pan. If you want to bake them first, you can reduce the cooking time to 20 minutes or until the cheese is melted.
    • I like to use mild Italian sausage because of the added spices and flavors, but you can improvise by using ground beef or even a half-and-half mix.
    • This recipe makes it very easy and convenient to use a bag of frozen cauliflower rice! I thawed the bag in the microwave first and then squeezed it to remove the water before putting it in the pan.
    • This would be a great idea for keto cooking! These keto stuffed peppers are great as leftovers when you reheat them in the microwave or fryer.

Roasted peppers stuffed with Italian sausage and cauliflower rice with melted cheese on top!


Preheat the oven to 400 degrees. Cut the peppers in half lengthwise, remove the seeds and the inner skin. Place them on a 9×13 baking sheet or on a rimmed baking sheet.


Preheat the oven to medium-high heat. Chop the sausage and cook it in a pan with the chopped onion and garlic. If necessary, drain off the fat.


Add cauliflower rice and marinara sauce to meat mixture and season with Italian seasoning, salt and pepper. Mix until blended.


Put the meat mixture in each pepper. Use the back of a spoon to smooth them out a bit. Place a slice of provolone cheese on each pepper.


Cover the baking sheet with aluminum foil. Cover and bake 35 minutes, until peppers are tender. Remove the foil and bake for another 10 minutes, until the cheese is melted and lightly browned. Remove and allow to cool. Serve warm with chopped basil as a garnish. Have fun!
